Avocado-basil pesto with lime, onions and olive oil

Ingredients for 2 servings:

  • 1 avocado(s), ripe
  • 1 onion(s)
  • 1 garlic clove(s), more if desired
  • 10 basil leaves, fresh
  • ½ lime(s)
  • 2 tbsp Parmesan, freshly grated
  • some forest honey or similar honey
  • 1 pinch of nutmeg
  • salt and pepper
  • 3 tbsp olive oil

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Peel and dice the onion, and fry it over medium-high heat with 1-2 tablespoons of olive oil. Peel the garlic clove and add it whole to the onions after about 5 minutes. While the onions are frying slowly, halve the avocado and remove the pit. Scoop out the flesh with a spoon and place it in a blender. Wash the basil, shake it dry, and add it to the blender with the remaining olive oil and the lime juice. When the onions start to turn golden brown, add a dash of honey to the onions and fry until golden brown. Then let the onions and garlic cool slightly and add them to the blender along with the Parmesan cheese. Blend the ingredients and season with a little nutmeg, salt, and pepper. Adjust the consistency with a little olive oil if necessary. This pesto goes wonderfully with various types of pasta or simply as a delicious dip. It has about 205 kcal per serving.
