Ingredients for 2 servings:
- 4 slices of wholemeal bread
- 2 small carrots
- 1 avocado(s), ripe
- 1 tsp lemon juice
- ½ cucumber(s)
- 3 tbsp cottage cheese or cream cheese
- salt and pepper

Peel and coarsely grate the carrots. Halve the avocado, remove the pit, and scoop out the flesh. Mash with a fork. In a bowl, combine the avocado with the grated carrots, lemon juice, salt, and pepper. Thinly slice the cucumber. Spread the cottage cheese or cream cheese on the bread slices and top with cucumber slices. Spread the avocado-carrot mixture on top.
