- 3 eggs
- 1 shallot(s)
- 1 avocado(s), ripe
- ½ lemon(s), juice
- 2 tbsp crème fraîche
- ½ tsp mustard
- ½ bunch chives
- salt and pepper

Hard-boil the eggs, rinse, peel, and finely dice. Peel the shallot and finely dice it. Chop the chives into small rings. Halve the avocado and remove the pit. Scoop out the flesh from the halves with a spoon and place it in a bowl. Mash with a fork, add the lemon juice, shallot, crème fraîche, and mustard. Mix everything well, then fold in the diced eggs and chives. Season the spread with salt and pepper. Freshly baked bread goes perfectly with this spread.
