Avocado fried with goat cheese

Ingredients for 4 servings:

  • 1 avocado(s), ripe
  • 2 tbsp goat’s cheese
  • 50 g ground almonds or other nuts
  • 2 tbsp oil
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 1 minute; Total time approx. 6 minutes

Halve the avocado, remove the pit, and peel the skin. Season inside and out with salt and pepper. Fill the pit with goat cheese and smooth it down. Then split the halves lengthwise again and press one side into the ground almonds. Heat the oil in a pan and place the stuffed avocado in the pan, almond-side down. Fry for about 1 minute, remove, and baste with the cooking juices. Serve warm. A great appetizer, quick and easy to prepare. Make sure the avocado is really ripe!
