Goat cheese on potato rösti

Ingredients for 2 servings:

  • 1 large potato(s)
  • 1 apple (Boskoop)
  • 1 sprig(s) of thyme
  • 2 small goat’s cheeses
  • 1 tbsp butter
  • 1 tbsp clarified butter
  • nutmeg
  • 1 tbsp sugar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Part of a Christmas festive menu

First, wash, peel, and slice the apple, then core it. Then, heat the butter and sugar together and caramelize the two largest apple slices, reserving the rest for another dish. Place the caramelized apple slices in a baking dish and place a slice of goat’s cheese on top of each. Next, coarsely grate the potato and season the grated potatoes with salt, pepper, nutmeg, and thyme. Fry two crispy rösti from the potatoes in clarified butter in a pan. Place the baking dish, along with the apple and goat’s cheese, under the grill for two minutes. Arrange the apple and goat’s cheese on top of the finished rösti, garnish with thyme, and serve immediately. Enjoy!
