Ingredients for 1 servings:
- 100 g sugar
- 2 eggs
- 1 avocado(s)
- ½ lemon(s), juice
- 250 g flour
- 75 ml sunflower oil
- juice or water if needed
- 2 tsp baking powder
- 1 sachet of vanilla sugar
Instructions
Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour
for approx. 12 pieces
Whisk the sugar and egg until frothy, add the avocado flesh and the juice of half a lemon. Mix in the flour and add the oil. If the batter is too stiff, add a little liquid (I like to use multivitamin juice). Finally, stir in the baking powder and vanilla sugar. Bake for 20-25 minutes at approximately 160 degrees Celsius (320 degrees Fahrenheit). Tip: If you like, you can add 25g of chopped almonds/hazelnuts or pistachios.
