Avocado Quiche

Ingredients for 8 servings:

  • 250 g flour
  • 1 tsp salt
  • 150 g butter, cold
  • 1 egg(s)
  • 2 tbsp cream
  • 4 avocados, ripe
  • 100 g horseradish-flavored cream cheese
  • 1 egg(s)
  • ½ dl cream (half cream)
  • salt and pepper
  • 1 lemon(s), some juice and grated peel

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Mix the flour and salt, add the butter, cut into pieces, and rub it between your fingers to form a crumbly dough. Whisk together the egg and cream and add it. Quickly knead everything together to form a smooth dough. Wrap the dough in cling film and chill for at least 30 minutes. Then roll out the dough and line either 8 small, buttered ramekins or a large baking dish. Prick the dough several times with a fork and then chill again. Halve, peel, and pit the avocados. Slice the flesh and immediately mix with the lemon juice. Mix the egg, single cream, cream cheese, and lemon zest well, and season. Cover the pastry base with the avocado slices and spread the topping over them. Bake the quiche(s) in an oven preheated to 220°C (425°F) for about 20-30 minutes.
