Puff pastry – olive – quiche

Ingredients for 4 servings:

  • 1 pack of puff pastry, round, from the refrigerated section
  • 200 g pitted olives
  • 200 g cheese, grated
  • 1 egg(s)
  • 1 tbsp parsley, chopped
  • some breadcrumbs
  • 150 ml Cremefine
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C (160°C fan-assisted). Grease a 26cm tart pan and line it with the puff pastry, forming a raised edge. Prick the base several times with a fork and sprinkle with breadcrumbs. Finely chop the olives. Mix the grated cheese with the egg, crème fraîche, and parsley. Season the topping with salt and pepper, but be careful with the salt, as the olives and cheese are salty. Sprinkle the olives over the pastry and spread the topping over it. Bake the quiche in the preheated oven for about 30 minutes, until the cheese is nicely browned.
