- 150 g pasta
- 1 avocado(s)
- 2 tomatoes
- ½ lime(s)
- e.g. Parmesan
- n. B. Harissa
- e.g. olive oil
- Salt
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
Cook pasta of your choice in plenty of salted water until al dente. Meanwhile, dice the tomatoes and slice the avocado. Add the juice of half a lime. Season with harissa and salt, depending on the amount of Parmesan cheese. Mix everything with the pasta, drizzle with good olive oil and the Parmesan cheese, and you’re done! The harissa spice mix is really important for the flavor; of course, the amounts of all ingredients can be adjusted to suit your individual taste. It also tastes great cold as a pasta salad. I can also imagine pine nuts going well with it.
