Ingredients for 4 servings:

  • 500g pasta
  • salt water
  • 2 avocados, ripe
  • 2 tomatoes
  • 1 clove(s) garlic
  • ½ lemon(s), untreated
  • 10 black olives with stones
  • Parmesan
  • salt and pepper
  • e.g. olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the pasta of your choice (I like bavette or linguine) in salted water. Meanwhile, cut the avocados open, remove the stones, and scoop out the flesh from the skin. Place the avocado flesh, crushed garlic, salt, pepper, Parmesan cheese, olive oil, zest, and juice of half an unwaxed lemon in a blender and blend. Alternatively, mash with a fork and mix. Then stir in the chopped tomatoes and pitted black olives. Drain the cooked pasta, return it to the pot, and toss with the avocado sauce.
