Avocado with goat cheese cream from the oven

Ingredients for 4 servings:

  • 2 avocados, ripe
  • 100 g goat’s cheese
  • 10 olives, without stones
  • 1 m.-sized tomato(s)
  • 3 tomatoes, in oil, sun-dried
  • 1 tbsp basil, freshly chopped
  • 1 tsp thyme
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Halve the avocados and remove the pits. If they are very small, scoop out more of the flesh and add the scraped flesh to the filling. Preheat the oven to 180°C. Remove the seeds from the tomatoes and chop finely. Drain the sun-dried tomatoes and chop finely, as well as the olives. Add the chopped herbs and season with salt and pepper. Mix everything with the goat’s cheese and divide it among the four avocado halves. Place the avocados on a baking sheet in the center of the oven and bake for about 15 minutes, until lightly browned.
