Ingredients for 4 servings:
- 4 chicken breast fillets, without skin, approx. 125g each
- 1 melon(s) (Galia melon), approx. 800 g
- 150 g cherry tomatoes
- 100 ml balsamic vinegar, white
- 1 head of lettuce
- 15 mozzarella (mini)
- 1 bunch of chives
- 1 bunch of chervil
- 2 tbsp olive oil
- Sugar
- Salt
- pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Brown the fillets all over in hot oil, cook over medium heat for about 12-15 minutes. Remove the fillets from the pan, season with salt and pepper, and set aside. Wash the lettuce and tear into bite-sized pieces. Trim and halve the tomatoes. Drain the mini mozzarella and roughly dice them, if desired. Wash the chives and cut them into small rolls. Set some aside for garnish. Trim the chervil and tear the leaves from the stems. Quarter the melon, remove the seeds, peel the quarters, and cut into wedges. Mix the vinegar with salt, pepper, sugar, chives, and oil. Mix the lettuce, melon, mozzarella, tomatoes, and chervil. Arrange on 4 salad plates and pour the salad dressing over the salad. Cut the chicken breast fillets into attractive slices and place them on the salad. Garnish the salad with chives and serve.
