Fried feta cheese wrapped in bacon on arugula and parmesan salad

Ingredients for 4 servings:

  • 300 g sheep’s cheese (e.g. Manouri)
  • 100 g bacon, thin slices
  • e.g. arugula
  • e.g. Parmesan
  • olive oil
  • Balsamic vinegar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Wash the arugula and toss it with balsamic vinegar and olive oil, then divide it among the plates. Grate the Parmesan cheese freshly over the arugula using a coarse cheese grater. Cut the feta cheese into cubes and wrap them in bacon, using toothpicks to secure them if desired. Fry in hot oil, turning frequently until the bacon is browned throughout. Garnish the arugula salad with the feta cheese cubes – and you’re done!
