Axel's Salad

Ingredients for 4 servings:

  • 3 cucumber(s)
  • 6 tomatoes
  • 2 jars of feta cheese, pickled
  • 1 bunch of chives
  • 2 onions
  • Salt
  • pepper
  • Garlic, lots of
  • Vinegar
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the cucumbers, quarter them, and chop them finely. Halve the tomatoes and slice them. Cut the chives into small rolls and finely dice the two onions. Drain half of the feta. Put the cucumbers in a large bowl, season with salt and pepper, and mix well. Add the crushed garlic. We always use a lot, but it’s a matter of taste. Add the tomatoes too. Mix in half of the drained feta cheese with the rest of the oil (this gives it a good flavor) and mix everything well. Season to taste with vinegar and sugar! Finally, sprinkle in the chives and stir well again. You can of course add other ingredients to the salad if you like (radishes, etc.). We love this version, especially for barbecues in the summer. But we make the salad like this often during the rest of the year, too!
