Bacon and eggs in mini cocottes

Ingredients for 4 servings:

  • 150 g bacon (hamburger bacon) in slices
  • 4 handfuls of cheese, grated (mozzarella or parmesan)
  • 4 eggs
  • 1 pepper(s), cut into strips
  • 1 tomato(s), sliced
  • pepper
  • Chives, cut into rolls

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

perfect as a starter or a quick snack

Preheat oven to 180°C (top and bottom heat). Line the mini cocottes with bacon in a crisscross pattern. Add the pepper strips and top with tomato slices. Sprinkle with cheese and place the cocottes in the oven for five minutes, until the cheese is melted. Crack the eggs into the pan and pour over the cheese. Bake for another 15 minutes (or until the eggs are firm enough to stand). Finish with a little pepper and/or chives. Serve with fresh bread or toast. Alternatively, you can use any other vegetables.
