Bacon dumplings mom's way

Ingredients for 5 servings:

  • 7 rolls, stale, diced
  • 250 ml milk
  • 5 small eggs
  • 100 g flour
  • 1 onion(s)
  • some butter
  • ½ bunch parsley
  • 1 bunch of chives
  • 125 g smoked ham, diced
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the bread in a bowl. Heat the milk and add it. Dice the onion and sauté in butter in a small saucepan. As soon as the onion begins to brown, add the ham. These should also fry a little, but not become too crispy or hard. Let it cool slightly, then add the eggs, the onion and ham mixture, and the flour to the dumpling mixture. Add the chives and finely chopped parsley. Season with salt, pepper, and nutmeg. Mix by hand and let the dough rest for 15 minutes. Meanwhile, bring a large pot of salted water to a boil. Form the mixture into dumplings and add them to the boiling water. Reduce the heat and let the dumplings simmer in the salted water for about 15 minutes until tender. To serve, remove the dumplings from the water with a slotted spoon. The specified amount of dough makes about 10 dumplings.
