Zucchini sandwiches

Ingredients for 2 servings:

  • 1 large zucchini
  • 1 egg(s)
  • 100 g breadcrumbs
  • 100 g cooked ham
  • 2 slices of cheese
  • salt and pepper
  • Fat

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the zucchini into slices approximately 0.5-1 cm thick. Top half of the slices with a piece of ham and some cheese. Place a second slice on top. Carefully dip in egg beaten with salt and pepper, then coat in breadcrumbs. Fry in hot oil until golden brown on both sides. Other types of sausage are also possible (e.g., salami). This is one way to cope with the annual zucchini glut.
