Bacon jam

Ingredients for 1 servings:

  • 500 g bacon, finely sliced
  • 2 large onions, red
  • 2 garlic cloves
  • 120 ml coffee, black
  • 70 ml apple cider vinegar
  • 50 ml agave syrup
  • 100 g brown sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Fry the bacon until it’s almost crispy. Finely chop the onions, press the garlic, and add it, then caramelize it with the sugar. Finally, add the liquid, stirring constantly, and reduce it slowly. Season with coarse pepper. The whole thing should keep in a sealed container in the refrigerator for up to 3 months, but we usually use up all of it after a week. Delicious on a barbecue, with boiled potatoes, stirred into mashed potatoes, on freshly buttered bread, over hot dogs… basically anywhere. It’s a side dish, so there’s no specific portion size. That makes it difficult to record anything.
