Bacon muffins finger food

Ingredients for 1 servings:

  • 250 g spelt flour type 630
  • 250 g low-fat curd cheese
  • 250 g butter
  • 1 tbsp pine nuts
  • 1 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
  • 4 half tomatoes, dried
  • e.g. sea salt
  • e.g. pepper (spiced pepper)
  • 12 slice(s) bacon, approx. 1 mm thick
  • 100 g Emmental cheese
  • 100 g goat cheese
  • 4 tbsp barbecue sauce
  • 4 tbsp sweet chili sauce
  • 2 tbsp agave syrup
  • 2 tbsp tequila
  • 1 tbsp olive oil
  • 1 egg yolk

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours

with a spelt flour and quark dough, makes 12 pieces

Sift the spelt flour and place it in a food processor (here, a Thermomix) with the quark. Cut the cold butter into slices, add it, and mix the mixture into a dough for five minutes on the kneading setting. Place the dough in a bowl and refrigerate for two hours. Finely chop the seeds and sun-dried tomatoes and toast them in olive oil over medium heat. Then let it cool. Cut the bacon into thirds, removing the bones at the ends if necessary. Grate the cheese. Knead the toasted seeds into the quark dough and quarter the mixture. Roll out a flat strip with a rolling pin. One strip will make three bacon muffins. Place the thirded bacon next to each other on the dough, so that the bottom half rests on the dough and extends over the top half. Brush the bottom half with the barbecue sauce or the sweet chili sauce, or both. Place about 1 tablespoon of the grated cheese on each ‘unit’. Cut off the dough at the intermediate points; you should have three units ready for rolling. Place the rolled-up bacon muffins in a muffin tin and brush the surface of the dough with egg yolk. Spread the overhanging bacon out like a rose. Repeat this process three times for the other three ‘units’. Place the baking tray in the oven preheated to 180°C and bake the muffins for 15 minutes. Mix the agave juice with the tequila. After 15 minutes, remove the baking tray from the oven and brush the bacon with it. Bake the muffins for another five minutes. Once the desired degree of browning is achieved, remove the baking tray from the oven and let cool. Use a knife to cut along the inside of a depression in the baking tray and use a tablespoon to pry out the bacon muffins.
