Bacon pancakes with lamb's lettuce

Ingredients for 3 servings:

  • 2 eggs
  • 200 g flour
  • 50 ml mineral water
  • 200 ml milk
  • 50 g sugar
  • 1 pinch of salt
  • 12 slices of bacon
  • 200 g cream
  • 1 shot of vinegar
  • 1 shot of oil
  • salt and pepper
  • 1 bowl of lamb’s lettuce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

For the dressing, season the cream with a dash of vinegar and oil, along with salt and pepper. Wash and trim the lamb’s lettuce, and drizzle with the dressing. Mix the eggs, flour, water, milk, sugar, and a pinch of salt into a batter. Briefly fry 4 slices of bacon in a pan, then immediately add a generous 1/3 of the pancake batter. Fry the pancake on both sides. Use the remaining batter, each with bacon, to make two more pancakes. Serve the finished pancakes with the lamb’s lettuce.
