Spicy Kaiserschmarrn with herb curd

Ingredients for 2 servings:

  • 1 onion(s)
  • 3 eggs
  • 200 ml milk, low-fat
  • 150 g flour
  • 2 large carrots
  • 1 tsp oil
  • Salt and pepper, freshly ground
  • 250 g low-fat curd cheese
  • some mineral water (carbonated)
  • salt and pepper
  • Garlic
  • Herbs of your choice (e.g. chives, parsley and dill)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely dice the onion. Peel and finely grate the carrots. Separate the eggs. Whisk the egg yolks and milk well, stir in the flour, and season with salt and pepper. Beat the egg whites until stiff and carefully stir them into the batter along with the grated carrots. Heat 1 teaspoon of oil in a large pan and add the batter. Let it set over medium heat. Turn the Schmarrn after about 3-4 minutes (adding a second teaspoon of oil if necessary) and fry for another 3 minutes. In the meantime, mix the quark with a little mineral water until creamy and season with the spices and herbs to taste. Tear the finished Schmarrn into pieces with two forks, arrange on two plates, and serve with the herb quark.
