Ingredients for 4 servings:
- 1 kg potato(s), floury
- 1 m.-sized onion(s)
- 2 garlic cloves
- 400 g diced ham
- e.g. salt and pepper
- some butter
- 4 eggs
- 1 handful of fried onions
- e.g. cream or milk

simple, quick and delicious
Peel and wash the potatoes and boil in salted water. Meanwhile, peel and finely dice the onion and garlic cloves. Finely dice the ham, if not bought ready-made. Drain and mash the potatoes. Add cream or milk and butter to achieve the desired consistency. Sauté the onions and garlic in hot butter until translucent and add the ham cubes. Brown both to taste. Mix the potatoes with the ham and onions (or mash them) and season to taste with salt, pepper, and fried onions. Fry the eggs, don’t forget to add salt and pepper. Arrange everything on plates and serve. Danish or Nordic cucumber salad goes well with this, which adds an extra touch (just drain the cucumber water first!).
