How Do I Recognize Bad Mold on Soft Cheese?

I have an opened blue cheese in the fridge. More mold has formed on it. Is this mold unhealthy?

Camembert or blue cheese mold continues to ripen and spread. It can also transfer to other pieces of cheese. We cannot judge from afar whether your case is foreign mold or the desired noble mold. Toxic mold on soft cheeses is usually greenish to gray or with red spots. The cheese can also smell musty. If this applies to your cheese, better throw it away. If in doubt, you should stop eating the cheese. Mold toxins that are harmful to health may have formed.

Soft or cream cheese is particularly susceptible to mold because its water content is much higher than, for example, a hard cheese. Due to the higher water content, the mold can spread through the fungal network throughout the piece of cheese and form toxins (so-called mycotoxins) without us being able to see it. It is therefore not enough just to cut away the piece affected by the visible mold.

Hard cheese is an exception. You can cut off a large chunk around the mold and eat the rest.
