Ingredients for 4 servings:

  • 6 tbsp oil
  • 1 small eggplant(s), in pieces
  • 300 g natural yogurt
  • ½ tsp salt
  • ½ tsp cumin, roasted and ground
  • ½ tsp chili powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Yogurt with eggplant

Heat the oil in a pan and sauté the eggplant pieces until browned. Drain. Stir the yogurt in a bowl until smooth. Add salt, cumin, and chili powder and mix thoroughly. Transfer the sautéed eggplant pieces to a bowl and pour over the spiced yogurt. Chill. Serve with Indian dishes.
