Ingredients for 12 servings:
- 240 g flour
- 7 g baking powder
- ½ tsp baking soda
- 50 g brittle, oat flakes-*
- 1 egg(s)
- 100 ml oil
- 150 g yogurt
- 1 tbsp rum
- 125 ml Baileys Irish Cream
- 80 g sugar
- Chocolate glaze
- Brittle :*
- 70 g oat flakes, fine
- 2 tbsp butter
- 2 tbsp sugar
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
with oat brittle
Prepare the brittle: Heat the butter, lightly brown the sugar, add the oats, and toast the oats while stirring until brown, then let cool. Preheat oven to 160°C (320°F). Combine the flour, baking powder, baking soda, and 50g of the brittle. In another bowl, whisk the egg with the sugar, add the oil, yogurt, rum, and Baileys. Add the flour mixture and whisk until well combined. Pour the batter into the muffin tins and bake for about 20-25 minutes. Spread the chocolate glaze on the cooled muffins and sprinkle with the remaining brittle.
