- 625 ml water, lukewarm
- 30 g sugar or honey
- 30 g salt
- 500 g flour
- 500 g semolina, soft wheat
- 21 g dry yeast, or 30 g fresh yeast

my absolute favorite, super simple and versatile – suitable for the bread maker
Add water, sugar or honey, and salt to the bread machine. Then add the flour, semolina, and yeast. Knead everything thoroughly and let it rise. Remove the dough and shape the bread, pizza base, and breadsticks as desired. I now use this dough for all the savory yeast doughs I make. This dough is my favorite because the semolina gives it a “bite” and it’s easy to work with. The pizza bases turn out simply amazing, beautifully thin and crispy. If this recipe is too much for you, you can use half the dough to make two pizza bases, pre-bake them at 240°C for 5 minutes, and then freeze them immediately. If this is too much for you (conventional sized bread makers can’t handle 1kg of flour!!!), I have reduced the recipe again to make it suitable for the machine: 250g flour 250g semolina, soft wheat 15g sugar or honey 15g salt 310ml water 10g dry yeast or 15g fresh yeast
