Bake hazelnut biscuits without flour
With our quantities, you can prepare about 20 hazelnut biscuits.
- Before you turn your attention to the dough, roast 20 whole hazelnuts in a pan without fat and then remove them to cool.
- In a bowl, first mix 100 g softened butter with 60 g powdered sugar and half a packet of vanilla sugar. Add 75g cornstarch, 150g ground hazelnuts, and a pinch of cardamom, and knead the dough until smooth.
- Shape the dough into a roll about 4 cm thick and wrap it in cling film. The dough must now rest in the fridge for about half an hour.
- Then cut 2 cm thick slices from the rolling pin and roll them into balls in your hand. Place these balls on a baking sheet lined with baking paper and press one of the roasted hazelnuts into the middle.
- In the oven preheated to 160 degrees, the hazelnut biscuits need about 15 minutes to finish.
