Ingredients for 1 servings:
- 120 g margarine (low-fat margarine, room temperature)
- 120 g sugar
- 1 tbsp vanilla sugar
- 1 pinch of salt
- 3 eggs (room temperature)
- 200 g flour
- 2 tsp baking powder
- 2 tbsp milk, low-fat (room temperature)
- ½ tsp lemon zest, grated
- ½ tsp cinnamon powder
- Bitter almond flavoring (a few drops, to taste)
- 100 g marzipan paste
- 60 g raisins
- 2 tbsp brown sugar
- 2 tbsp almonds, chopped
- 8 small apples
- 1 tsp powdered sugar, for dusting

Beat the margarine with sugar, vanilla sugar, and salt until creamy, gradually adding the eggs. The ingredients should be at the same temperature to form a smooth mixture. Mix the flour and baking powder and sift into the batter. Stir in the milk. Refine the batter with lemon zest, cinnamon powder, and bitter almond flavoring. Cut the marzipan into fine cubes and mix with the raisins, brown sugar, and almonds. Mix 40g of the marzipan and raisin mixture into the batter (stirring vigorously!) and pour into a 26cm springform pan lined with baking paper. Core the apples and fill with the remaining marzipan mixture. Press the filled apples into the batter and bake the cake in a preheated oven at 180°C (gas mark 2, fan oven: 160°C) on the middle shelf for about 1 hour. Cover the cake with aluminum foil after about 40 minutes of baking. Let the cake cool in the pan and serve dusted with powdered sugar. TIP: 1. If the apples have hard skins, peel them first. 2. Instead of the bitter almond flavoring, you can also add a generous splash of Amaretto. In this case, omit the milk.
