Baked apple cookies

Ingredients for 1 servings:

  • 250 g flour
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 3 tsp cinnamon
  • 1 egg(s)
  • 100 g butter
  • 1 apple (or a leftover baked apple)
  • 3 tbsp raisins
  • 3 tbsp almonds, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

e.g. for using up leftover baked apples (makes about 35)

Preheat the oven to approximately 200°C (top/bottom heat) or approximately 180°C (fan oven). First, chop the apple (it’s best to puree it, or simply set aside the baked apple without the peel). Using a dough hook, combine the flour, sugar, vanilla sugar, butter, and one egg until a smooth dough forms. Add the cinnamon, raisins, chopped almonds, and the apple and mix thoroughly until the dough has a smooth consistency. Now shape the dough as desired (I always use two teaspoons and form small balls with them) and place them on a greased or parchment-lined baking sheet. Bake the cookies on the middle rack for approximately 15-20 minutes, depending on the desired degree of browning. Finally, let the cookies cool on a wire rack and dust with powdered sugar before serving.
