Baked apple – red cabbage
- 1,5 kg Red cabbage
- 2 Onions
- 3 Apples
- Goose fat
- 2 Bay leaves
- 1 Pair Cloves
- 2 Star anise
- Salt
- Raw cane sugar
- 1 tbsp Lemon juice
- 3 tbsp Blackberry jam, homemade
- 250 ml Apple juice
- Red wine to refine
- 6 Apples (boskop)
Baked apple – red cabbage
- Remove the outer leaves from the red cabbage, then wash, quarter and cut into fine strips. Put in a colander. Peel and quarter the onions and place in a lightning chopper, finely chop. Put aside. Now wash the apples and put them in an apple divider.
- Remove the wedges and dice. Take a large saucepan and melt the goose lard in it as you feel. Add the finely chopped onions and sauté in them until translucent. Add red cabbage strips and sauté briefly. Then add the diced apple pieces.
- Add the bay leaves, cloves, star anise, salt, raw cane sugar, lemon juice, blackberry jam and apple juice, stir. Then cover and cook over medium heat for 2 hours and maybe longer depending on the stove. After cooking, season to taste and season with the red wine.
