Dumpling dough

  • 300 g Dumpling dough, potatoes (leftovers)
  • 50 g Mixed with bacon (rest)
  • 0,5 Onion (leftovers)
  • 125 g Potato flour
  • 1,5 tbsp Durum wheat semolina
  • 1 Egg
  • 1 Parsley
  • 1 Salt

  • 1 Mini cucumber
  • 1 Lettuce heart

dressing

  • 1 Herb vinegar
  • 1 Salt, gourmet pepper
  • 1 Honey to taste
  • 1 Water
  • 1 Oil
  • 1 Balsamic vinegar
  • 1 little Fruit, fresh as you like

Dumpling dough

  1. Put the dumpling dough in a bowl. Leave streaky bacon in a pan. Peel and chop half an onion. Let it become glassy in it. Then take the pan off the stove and cool down or cool down. Then add the potato flour, durum wheat semolina, egg, chopped parsley and salt to the bowl.

  1. Mix everything together. Then add the bacon and onion mixture. Now knead everything again and let it rest for about a quarter of an hour. Now prepare the small salad. Slice or finely slice the mini cucumber. Wash the lettuce heart, clean into bite-sized pieces.
  2. Prepare a dressing according to your taste, i.e. mix herb vinegar, salt, gourmet pepper, honey and water. Fold in a little oil and set aside. After the dumpling dough has rested, form small dumpling dough out of it. Bring salt water to a boil.
  3. Add the dumpling dough and let it steep. Later take a deep plate and place cucumber slices and pieces of lettuce in it. Drizzle with the dressing. Put the cooked bacon dumplings on top. Sprinkle with freshly chopped parsley and add fruit to taste. Finally, drizzle with balsamic vinegar.
