Ingredients for 3 servings:
- 1 ½ kg asparagus, green or white
- Salt
- 80 g butter
- 2 shallots
- 5 tbsp white wine (alternatively 2 tbsp lemon juice)
- 1 tbsp mustard, grainy
- 75 g Parmesan
- 2 tbsp whipped cream
- Pepper, freshly ground
- Sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the asparagus, trimming off any woody ends. Cook the asparagus in salted water with a pinch of sugar and a teaspoon of butter for 20 minutes. Remove and drain. Sauté the diced shallots in the remaining hot butter. Mix with the white wine, mustard, grated Parmesan, cream, salt, and pepper. Place the asparagus in an ovenproof dish and drizzle with the sauce. Place under the preheated grill for 5 minutes until a golden crust has formed (approx. 45 minutes).
