Baked Romanesco

Ingredients for 4 servings:

  • 1 kg Romanesco
  • 200 g cheese, grated
  • 3 tbsp Parmesan, grated
  • 3 tbsp vegetable broth granulated
  • 1 pinch(s) of pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Vegetarian, easy and quick

Cut the Romanesco into florets and add them to boiling water along with the vegetable stock. Cook for about 12 minutes. Then remove the florets with a slotted spoon and place them in a non-stick casserole dish. Add a little of the vegetable stock and season with pepper. Sprinkle the grated cheese and Parmesan cheese over the cabbage. Bake at 200°C (convection oven) on the middle rack until the cheese is lightly browned. You can now eat the cabbage with baguettes or serve it as a vegetable side dish.
