Ingredients for 4 servings:

- 2 cloves garlic
- 1 chili pepper(s)
- 1 tbsp oil
- 100 g bacon cubes or minced beef
- 1 sprig(s) rosemary
- 1 can kidney beans, 500 g
- 1 can of pizza tomatoes, 400 g
- 1 can corn, 140 g
- 1 tbsp lime juice
- 1 tbsp honey
- some paprika powder
- salt and pepper
- 2 avocados, ripe
- 4 eggs
- Parsley for garnishing
- some lime juice
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Peel the onions and garlic and chop both finely. Halve the chili pepper, deseed, rinse, and cut into thin rings. Fry the onion, garlic, bacon, rosemary, and chili in a little oil. If using minced meat, remove the onion/garlic/chili mixture from the pan and set aside. Then fry the minced meat in the pan until all the juices have evaporated. Then add the onion mixture back in. Add the tomatoes and cook over low heat for 5 minutes. Drain the beans and corn, rinse, and drain. Add both to the sauce and let it simmer for another 10 minutes. Season to taste with salt (careful because of the bacon), pepper, paprika, honey, and lime juice. If the pan is ovenproof, you can leave the mixture in the pan. Otherwise, transfer everything to a baking dish. Preheat the oven to 180°C (fan). Halve the avocados, deseed them, season with salt, and pepper. If you are using large eggs (size L), the avocados must be carefully hollowed out a little larger. Place the avocados cut-side up in the baking dish. Now crack an egg into each avocado half. It is best to separate the egg over a small bowl and remove some of the egg white. There is usually just too much egg white and you may be able to use the rest for baking. Now put everything in the oven and bake for about 15-20 minutes. It is perfect when the egg white is cooked and the yolk is still partly runny, like a breakfast egg. Finally, drizzle the avocados with lime juice and garnish everything with a little chopped parsley. If it is not spicy enough for you, you can add a few drops of green or red Tabasco over the vegetables. The quantities of avocados vary. We each eat two halves. Just try it!
