Baked avocado

Ingredients for 4 servings:

  • 2 avocados, ripe
  • 5 tbsp olive oil
  • salt and pepper
  • 1 handful of cashew nuts
  • 200 g Parmesan
  • 1 tbsp lemon juice
  • 3 slices of brown bread
  • Parsley, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve the avocado lengthwise and remove the stone. Cut the avocado halves into small cubes, taking care not to damage the skin. Place the avocado cubes in a bowl and drizzle with lemon juice. Cut the bread into small cubes, toss in oil, and spread on baking paper. Toast in the oven at 150°C for about 10 minutes. Add the bread cubes to the avocado cubes, season with salt and pepper, and add the parsley. Finely chop the cashews and add them. Finally, fold in the Parmesan. If you’re not using fresh Parmesan, grate in some more Emmental cheese. Stuff the avocado halves with this cheese and bake in the oven at 200°C for about 10 minutes. Serve fresh.
