Baked beetroot

Ingredients for 4 servings:

  • 4 beetroot tubers (approx. 750 g)
  • 1 bunch of chives
  • 200 g crème fraîche
  • Salt
  • Pepper from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the beets thoroughly and wrap each one tightly in a piece of aluminum foil. Place the beets on a rack in the oven (middle rack) and bake at 200°C (Gas Mark 3) for 70 minutes. Finely chop the chives and mix them into the crème fraîche, season with salt and pepper. Break the beets apart and serve with the crème fraîche mixture. Serve with whole-grain bread and a full-bodied red wine.
