Baked butternut squash

Ingredients for 2 servings:

  • 3 garlic cloves
  • 1 butternut squash
  • 4 tbsp vegetable oil
  • ½ tsp rosemary, ground
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

with garlic and rosemary

Trim the ends of the pumpkin, halve the pumpkin lengthwise, and remove the seeds. Score the pumpkin flesh in a lattice pattern. Slice two of the garlic cloves and arrange the slices in the hollowed-out portion. Finely chop the third clove and mix with oil, rosemary, salt, and pepper. Brush the pumpkin halves with the mixture and bake at 200°C (top/bottom heat) for 40-50 minutes on the middle rack. Brush the oil that collects in the hollowed-out portion over the pumpkin every 20 minutes.
