Baked cauliflower

Ingredients for 6 servings:

  • 1 head of cauliflower
  • 30 g butter
  • 30 g flour
  • 500 milk
  • salt and pepper
  • 100 ml sour cream
  • 130 g mozzarella, grated
  • 2 egg yolks
  • some butter, for greasing

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Remove the outer leaves of the cauliflower and cut the head into bite-sized pieces. Place in cold, salted water, bring slowly to a boil, then reduce the heat to low and simmer for 10 minutes, until the cauliflower is tender but still has a bite. Drain, refresh in cold water, and drain. Preheat the oven to 180°C. Lightly grease an ovenproof dish with butter. For the cheese sauce, melt the butter in a saucepan, stir in the flour with a wooden spoon or whisk, and sauté for 3 minutes over low heat. Remove from the heat and gradually stir in the cold milk. Return to the heat and bring to a boil, stirring constantly. Season with salt and pepper to taste. Add the cream. Remove from the heat and stir in 100g of the cheese and the egg yolks. Cover the bottom of the dish with just a little of the sauce, add the cauliflower, and pour the remaining sauce over it to completely coat. Sprinkle with the remaining cheese and a little pepper and bake for 15 minutes until the cheese is golden brown.
