Baked chicken breast

Ingredients for 1 servings:

  • 1 chicken breast
  • 3 tsp pesto, of your choice
  • 1 onion(s)
  • 1 tomato(s)
  • 5 black olives
  • 3 peppers, pickled
  • some salt
  • some pepper
  • ½ ball of light mozzarella
  • 1 sprig(s) rosemary
  • some oregano

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Mediterranean and summery light

Preheat the oven to 200°C. Slice the tomato and mozzarella, cut the pepperoni into rings, and thinly slice the onion. Place the chicken breast in a baking dish. Spread the pesto over the chicken breast. Layer some of the tomato slices, pepperoni rings, and onion wedges on top of the chicken breast. Season with salt and pepper. Spread the mozzarella and rosemary on top and sprinkle with oregano. Mix the remaining tomato slices, onion, pepperoni rings, and olives, season lightly, and arrange them around the chicken breast. Bake in the oven for about 1/2 hour. Serve with baguette.
