Baked Chicken Breast with Pimientos De Padrón

The perfect baked chicken breast with pimientos de padrón recipe with a picture and simple step-by-step instructions.

  • 2 rest Grilled Chicken Breasts
  • 1 teaspoon Extra virgin olive oil
  • 1 tablespoon Ham cubes
  • 0,5 Onion in strips
  • 1 kl. Can Mushroom slices
  • 1 corner Cheese cream herbs
  • Seasoned pepper
  • 150 ml Cream

For the vegetables:

  • 200 g Pimientos de Padrón
  • 2 tablespoon Extra virgin olive oil
  • Coarse sea salt
  1. Preheat the oven to 160 degrees.
  2. Fry the ham cubes with a little oil in a pan, then fry the onion strips and the mushroom slices until golden and then place the entire pan in an ovenproof dish.
  3. Place the chicken breasts on top and sprinkle the cheese on top. Season with pepper and finally baste with cream. Bake in the preheated oven for about 20 minutes.
  4. During this time, heat the olive oil in a saucepan, add the pimientos and let sizzle covered for about 2 minutes, shaking the saucepan from time to time.
  5. Sprinkle the pimientos de padrón with coarse sea salt and serve with the gratinated chicken breasts.
