Baked Cod – Traditional Baked Cod

Ingredients for 4 servings:

  • 800 g cod fillet(s)
  • 1 onion(s), finely chopped
  • 200 g mushrooms, sliced
  • 3 tbsp butter
  • 500 ml milk
  • 2 tbsp cornstarch
  • 4 slices of breakfast bacon
  • 3 tbsp breadcrumbs
  • 1 bay leaf
  • lemon juice
  • Worcestershire sauce
  • salt and pepper
  • Parsley, finely chopped
  • Thyme

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Divide the fish fillet into four portions and drizzle with lemon juice and Worcestershire sauce. Grease a baking dish with about 1/4 of the butter. Heat the remaining butter in a pan and sauté the onion and mushrooms, then add them to the baking dish. Place the fish fillets on the mixture and season with salt, pepper, thyme, and parsley. Mix the cornstarch with a little cold water until well blended. Bring the milk to a boil, stir in the cornstarch, and continue stirring over low heat until a creamy sauce forms. Add the bay leaf to the sauce and pour the sauce over the fish. Cover and bake in the oven at 180°C for 10 minutes. Meanwhile, fry the bacon on both sides until crispy. Remove the fish from the oven, sprinkle the breadcrumbs over the fish, place a slice of bacon on each fillet, and bake uncovered in the oven at 220°C for another 10 minutes. Boiled potatoes go well with this.
