Baked curry mustard schnitzel pockets

Ingredients for 3 servings:

  • 6 small turkey or pork schnitzels
  • 6 slice(s) ham, raw
  • 6 slices of cheese (Gouda)
  • 250 ml cream (low-fat cream is also possible)
  • 200 g crème fraîche (low-fat is also possible)
  • 200 g grated cheese for topping
  • 3 tbsp mustard, hot
  • 5 tbsp curry powder
  • salt and pepper

Preheat oven to 200°C fan/convection oven (top/bottom heat: 225°C). Lightly beat the schnitzels. Place a slice of ham and a slice of cheese on each schnitzel and then seal them together. Secure with toothpicks. Place the finished schnitzels in a deep casserole dish (in principle, you could also fry the schnitzels in a pan, but this would be more time-consuming and not as quick). In a bowl, combine the crème fraîche, cream, curry powder, mustard, and seasonings to taste and whisk. Add about half of the grated cheese and mix well. Then pour this mixture over the schnitzels. Sprinkle the remaining cheese on top and place in the oven. Bake for 30-45 minutes, depending on the thickness of the schnitzels (covering the cheese with aluminum foil for the first half of the baking time if necessary). Serve with pasta or mashed potatoes. Warning: This is very filling.
