Baked duck breast with roasted apples

Ingredients for 4 servings:

  • Duck breast, approx. 600g
  • 4 tbsp schnapps (fruit brandy)
  • Salt
  • pepper
  • 1 pinch of nutmeg
  • 1 onion(s)
  • 500 g carrot(s)
  • 3 tbsp oil (rapeseed oil)
  • 2 apples, sour
  • 1 tbsp applesauce

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the duck breasts, cover, and marinate with fruit brandy, salt, pepper, and nutmeg for about half an hour. Peel the onions and roughly chop them. Heat 1 tablespoon of oil in a roasting pan and sear the breasts on all sides. Add the vegetables, season, and about half a cup of water (or fruit brandy). Place the roasting pan in the preheated oven and roast at 180°C for about 20 minutes. Wash, core, and slice the apples. Brown the slices in a pan with the remaining oil. Reduce the fat slightly from the duck stock and season with apple sauce, salt, and pepper. The duck breast tastes best with potato dumplings.
