Chicken breast with walnut crust

Ingredients for 4 servings:

  • 50 g walnuts
  • 4 tbsp breadcrumbs
  • 4 chicken breast fillets (600g)
  • salt and pepper
  • 3 tbsp flour
  • 20 g clarified butter
  • 1 bunch of parsley
  • 125 g crème fraîche
  • 1 lemon(s), untreated, thinly grated peel

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Chop the walnuts. Add the breadcrumbs. Wash the chicken breast fillets, pat dry, and season. Coat each one in flour, beaten eggs, and the walnut mixture. Fry in hot fat over low heat for about 4 minutes on each side. Wash the parsley, pat dry, and pick off the leaves. Add the crème fraîche and blend finely. Stir in the lemon zest and season to taste. Serve with the chicken breast fillets. Serve with a green salad and roasted potatoes, for example.
