Baked eggplant

Ingredients for 4 servings:

  • 1 eggplant(s)
  • 2 tomatoes
  • 2 garlic cloves
  • Basil, chopped
  • Worcestershire sauce
  • 4 slices of reduced-fat cheese (Gouda)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Low-fat, quick starter

Cut the eggplant into 1-1.5 cm thick slices and place them on a baking sheet. Sprinkle the finely chopped garlic on top, then season generously with pepper and a little salt. If desired, you can also drizzle with a little Worcestershire sauce. Thinly slice the tomatoes and place them on top of the eggplant. Sprinkle with basil and cover with the cheese slices. Bake in a preheated oven at 180°C for 15-20 minutes. Serve with baguette and fresh salad.
