Baked eggs with bacon

Ingredients for 2 servings:

  • 2 eggs
  • 1 tbsp butter
  • 2 slice(s) bacon, preferably English cut
  • 30 g crème fraîche
  • 30 g grated cheese, e.g. Edam, mozzarella or cheddar
  • salt and pepper
  • Chives for sprinkling

Working time approx. 5 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 13 minutes

quick idea for Easter brunch with the family

Fill a large, shallow casserole dish with boiling water. Butter two ramekins (or a muffin tin) and line each with a slice of bacon. Crack an egg into each ramekin and season with salt and pepper. Whisk the crème fraîche with the cheese and a little butter and add to the eggs. Carefully place the ramekins in the casserole dish and bake at 180°C (convection oven) for about 8 minutes. Remove the eggs from the oven and set aside. Finely chop the chives and sprinkle over the eggs. Enjoy!
