Recipe from Greece – quick and easy – also prepared as a main course
First, slice half of the tomatoes and cut the other half into chunks (peel and seed if desired). Brush two small baking dishes with butter, then place the tomato slices in the dish. Then, crumble the feta with a fork, then arrange the remaining chopped tomatoes and ham on top. Season the eggs with cayenne pepper and salt/pepper, whisk, and spread over the feta mixture. Then add the butter flakes and sprinkle with paprika. Bake the dish(s) in the preheated oven for about 10-15 minutes at about 200°C and sprinkle with oregano. Serve with flatbread and a fresh salad!
