Baked feta cheese with cold tomato sauce

Ingredients for 2 servings:

  • 1 pkt. sheep’s cheese / feta (approx. 200g)
  • 1 egg(s)
  • 3 tbsp flour
  • 50 g breadcrumbs
  • 1 tbsp thyme
  • 500 g tomatoes
  • 1 pt. basil (frozen or fresh)
  • 1 tbsp olive oil
  • 1 tbsp palm fat

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the feta cheese in half lengthwise and half crosswise (makes 4 slices). Roll the slices thinly in flour, then in beaten egg, and finally in a mixture of breadcrumbs and thyme. Peel the tomatoes, quarter them, and puree them in a blender. Season with salt and pepper, and add the basil. Fry the feta cheese in a mixture of olive oil and coconut oil over medium heat until it develops a light brown crust and becomes slightly softened on the inside. Serve the feta cheese with cold tomato sauce. Potatoes go well with it!
