Baked halibut on peppers

Ingredients for 4 servings:

  • 3 tbsp extra virgin olive oil
  • 2 red bell peppers
  • 1 bell pepper(s), yellow
  • 1 onion(s)
  • 1 tbsp balsamic vinegar
  • 1 tsp herbs de Provence
  • 80 g olives, black, pitted
  • salt and pepper
  • 4 tbsp parsley
  • 950 g fish (halibut)

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Clean the bell peppers and cut them lengthwise into 1-2 cm wide strips. Halve the onion and slice into strips, and chop the parsley. Cut the halibut into steaks (approx. 2-3 cm pieces). Preheat the oven to 200°C. Heat 2 tablespoons of oil in a large non-stick pan over medium heat, add the bell peppers and onions, and sauté for 10 minutes. Add the vinegar, Provençal herbs, and olives and sauté for another 15 minutes. Season with salt and pepper and stir in 3 tablespoons of parsley. Spread the mixture on the bottom of a baking dish the size of the fish. Brush the fish with the remaining oil, season with salt and pepper, and then place it on top of the vegetables. Bake everything together for about 20 minutes. Garnish with parsley and lemon, and serve immediately.
