Baked Ham – Southern Style

Ingredients for 2 servings:

  • 2 slices of ham (roll), finger-thick sliced
  • some butter
  • 6 carnations
  • 2 slices of pineapple
  • 3 tbsp pineapple juice
  • 1 ½ tbsp sugar
  • 1 pinch of ginger powder
  • 1 tsp mustard, medium hot
  • 6 potatoes
  • ¼ liter milk (full)
  • ½ tsp salt
  • some butter
  • some pepper
  • some nutmeg
  • 2 bay leaves, dried

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Rolled ham with pineapple in sauce topped with mashed potatoes

Preheat the oven to 180°C (top/bottom heat: 150°C). Boil the peeled potatoes in heavily salted water with bay leaves and a little butter for about 20 minutes. Meanwhile, place the ham slices in a shallow, ovenproof casserole dish. Place the pineapple slices and cloves on top of the ham. Boil the pineapple juice with sugar and ginger powder until syrupy, add the mustard, and pour over the ham slices. Place in the preheated oven and bake at medium heat for 15 minutes, basting the pineapple and ham occasionally with the pineapple juice. While the ham is baking, prepare the mashed potatoes. Drain the boiled water from the potatoes. Mash the potatoes until smooth, gradually adding whole milk. Add a little butter for flavor, and finally season with salt, pepper, and nutmeg. Arrange everything appetizingly on plates, garnishing with a few garden herbs if desired. Tip: If you like, you can mix some fresh, chopped garden herbs or grated horseradish into the puree.
